kParticipantit has the texture of frosting. so silky. delicious on salted crackers. earthy. mushroomy (newly invented word). just plain yummy.

And thanks for the cheese recommendations. We tend to be in the store very late at night when the helpful cheese staffers aren’t still on duty – one of my favorite things about Metropolitan Market is not only that it is open 24 hours, but also that you can park in a brightly lit lot, close to the front door, enhancing the sense of safety when shopping at oh, say, 1 am.

SueParticipantThanks k for the recommendation – I just picked up some yesterday (on sale too!) and just had some. Really great texture/flavor. One of the few bries where I didn’t feel I had to peel the rind off before eating it too. Very good melted slight on the wheat french bread baquettes from Great Harvest.
